I was reccomending Pluckeye to a friend and the concern about privacy arose. Essentially Pluckeye has complete control of network activity, is installed as admin, and therefore could log all network activity. I wasn't able to find anything about this topic on the site. I am a bit of a skiddy and couldn't test such activity on my machine if I wanted.
So what I was wondering whether information of mine is sent anywhere remote or what Pluckeye's/Jon's policy is on this. Thank you very much.

There's https://u.pluckeye.net/doc/privacy , but it doesn't address your concern.
Pluckeye does not forward any network traffic from your machine. The only thing Pluckeye does send off your machine are your actual Pluckeye configurations if you use the synchronization feature. It sends this for obvious reasons.
